Now that I can't eat gluten and the cookies are off limits for me, the dark chocolate bark is my absolute favorite thing from Jacques Torres. It's amazing!
Remember the decadent chocolate waterfalls coursing into a chocolate-ified river in Willy Wonka & the Chocolate Factory? Pair that kind of dessert intensity with one man's passion and a cacao bean-shaped factory to create the cocoa-based goods. Let's just say, it was a chocolate lover's dream come true to spend the morning with Mr. Chocolate himself, learning to make, mold, and decorate a variety of chocolate confections, inspired by Fall and Halloween. Ever wonder how Jacques Torres (350 Hudson St., 212-414-2462; 66 Water St., 718-875-1269; 75 Ninth Ave.; 285 Amsterdam Ave., 212-787-3256; 30 Rockefeller Plaza, 212-664-1804) and his team of fabulous chocolatiers create such delicious treats day in and day out? Well, I donned a not-so-flattering hair net, lab coat, and gloves and hit the ground running at the Hudson Street headquarters yesterday to find out.
Not only did I work the chocolate conveyor belt, load up the chocolate bar wrapping station, and design my very own dark chocolate pumpkin mold, I also got a seriously cool inside look at what it takes to keep one of New York City's most renowned chocolate shops at the height of its game. Click through to see all the chocolate-y goodness!
Warning: you may suffer from acute chocolate overload after reading. Forge ahead at your own risk.
