Watermelon is arguably the ultimate Summer fruit. Hydrating (you better believe it), refreshing, lightly sweetened, and colorful to boot. It's good in copious — albeit, messy — amounts poolside, and you know what? It's even better in my martini glass. After introducing our minty drink picks, it's time to unwind with another Summer-perfect fruit infused potion. Here are four watermelon-infused cocktails to order post-work, stat.

  • Order the melone infusion cocktail at A Voce Madison (41 Madison Ave., 212-545-8555, pictured above) for instant melon-ious gratification. It's a potent mixture of cantaloupe, honeydew, and watermelon-infused vodka, aptly garnished with a slice of our fruit in question.
  • The West Village's CALiU (557 Hudson St., 212-206-6444) makes a mean watermelon sangria, a fittingly fresh complement to a night's worth of tapas. Try this Spanish-inspired drink on your next happy hour excursion or have it with CALiU's $25 brunch special, where the sangria is unlimited.
  • Pocha 32's (15 W. 32nd St., 2nd Fl., 212-279-1876) doozy of a drink, the watermelon soju, is big enough for four people to sip on, no problem. This Koreatown establishment serves its watermelon-infused soju in a hollowed out, halved watermelon. You have to ladle yourself a bowlful and, of course, don't forget to snack on the leftover soju-laced fruit.
  • Repeat "offender" Employees Only (510 Hudson St., 212-242-3021) never fails to delight us with its cocktail creations. The Waterloo features fresh muddled watermelon, Plymouth gin, Campari, lemon juice, and simple syrup. It's sophisticated, simple, and a perfect balance between bitter and sweet.
